Traveling To Machu Picchu

Where should I go in South America?
My partner and I are planning a 3 month vacation traveling through South America ... obviously, we want make major tourist attractions such as Machu Picchu, etc. .. But does anyone have ideas that are not so well known? We are planning to go from January to April, are very adventurous, athletic but not as we say!
Chile is the safest and most European. Eat some fresh salmon in one of the restaurants up the mountains with some local red wine. Visit the desert north of Santiago. Argentina has the tango and steak as well as terrible as red wine. Some museums and historical buildings. Brazil is large, beaches, Chris Redeemer, Sugar Loaf Mountain, great food, samba, Carat falls, etc. Uruguay Punta del Leste is too nice. In Peru is the Michu thing Machu-largest Japanese food, friendly people. Have you thought about going south to Patagonia? I would look into it.
